Is it possible to insert a larger disk into Raid?

Actually there is a server with two RAID 10 arrays. According to the server:
2x150 GB + 2x150 GB. RAID 300 GB. One disk is out. Array DEGRAGED,
2x2.5Tb + 2x2.5Tb. RAID 5.1 TB. One disk is out. The array is DEGRADED.
I understand correctly that in the second array it is required to replace the 3 TB disk. How important is the vendor? Will the array fall apart if I plug in another 3TB drive?
In the first array, is it possible to put a disk of a different model and capacity, for example, 500 GB?

Yes, you can install a larger disk, but only 2.5 will be used for this disk, and yes, you can use another vendor.
In general, I recommend replacing with identical disks, but this is not a dogma, for example, I had a raid of 3 disks of the same series (one vendor), then I bought 3 more disks (the same vendor but a different series) and at the same time I had 1 disk out of building, as a result, now in the raid there are 2 disks of one series and 3 disks of another, they have been working like clockwork for about 2 years
