What employer are you asking about? Some are watching, some are not.
You need to remember one thing - if you are not the author / active contributor of a popular repository with a bunch of stars - then an active profile on github only gives the employer an understanding that you can commit and push.
The decision on hiring is made based on the results of the interview, and if you know how to commit - well, cool, che, we can too.
Also, an active profile does not equal a good profile at all. I can go in, look at the style of writing commits, see a series of "fixes" and think that I don't want to work with you.
In short, you must either do it well or not show it to the employer :)
