Google AdSense specifically did not deal with checks, but I judge by US bank checks.
They are perpetual, that is, you can download them at any time, as long as there is a sufficient amount on the account of the party that issued the check. But in the case of Google, this amount will be :)

If I’m not mistaken, it used to be half a year, after which if you didn’t cash out, then the money was returned to your account.
Now I looked at the last check and there is no expiration date on it ..
upd. All the same, checks that are issued more than 6 months ago are not accepted for cashing.
