Customized accounting, statistics and analytics for the store - what platform to build on?

To begin with, I will briefly describe the general situation. We are talking about microbusiness, at the moment - with several hundred product names and a complete lack of automation. I myself am a confident user without any programming skills and do not yet have any serious budgets for ordering serious projects from the pros. There is a fairly clear understanding of the goals and the outcome, the question is - by what means to achieve this.
So, having opened my store, I was faced with the fact that ready-made ERP and CRM hardly meet my needs.
I would like to record and analyze as much information as possible, if you group the variables, it goes something like this:
- specific commodity articles with their constant characteristics (manufacturer, product group, etc.);
- characteristics varying from delivery to delivery and even from check to check (basic parameters - supplier, quantity of goods received and sold, purchase price, delivery price, price list and actual sale price, taking into account possible discounts, as well as their derivatives - the amount of revenue , stock balance, markup, etc.);
- data of buyers (all possible, we identify and store contact details in the system).
All this stuff is subject to the most variable analysis - the average markup by manufacturers, sales volumes by product groups, etc.
It turned out that already with the 2nd group of parameters (different suppliers and purchase prices for one product) in standard systems it is problematic. In Excel, this whole thing was somehow implemented on its own, but already starting from the 2nd purchase and doubling the assortment, it became clear that it would not be possible to keep such detailed statistics at such a pace for a long time in this format.
Can you please tell me which tools to use? I made a mistake, and is it possible to customize systems like "My Warehouse" or "1C" to solve my problem? Itself at present I look towards a DBMS. Will conditional Oracle help me? If so, which DBMS should be targeted (first of all, the correspondence of the functionality of the TOR is important, and secondly, the relative ease of development and stability)?

You have a typical accounting task. 1C is ideal for this.
Perhaps it makes sense to write your own configuration for your requirements.

Full is full of specialists and sites and forums.
It is not expensive.
So, having opened my store, I was faced with the fact that ready-made ERP and CRM hardly meet my needs.
You just didn't study them well. Everything is there. 90% of your wishes are fully covered by 1C.
The remaining 10% can be ordered to be revised by a 1C programmer.
