I got myself a vps with windows for programs that are not supported on mac os. The question arose, to leave Windows Server 2016 or install the usual 10ku? What is faster, more stable, more convenient?

Do you have the right to reinstall windows from the provider? I am silent about the legality of this process, not many licenses allow you to run windows as a guest in a virtual machine.
The choice of OS should be made solely on the basis of the requirements of the applications that will be launched there. With a high probability, you need desktop ones, so take the desktop OS.
ps will be slow (vps is not bare-metall and you will share it with others), there will be no support for 2D-3D acceleration (it is enough to work with applications that draw graphics, but run the same dubgis) and will lag (due to network delay) , there is no question of any comfort here.
pps If you use an operating system from a provider, if the provider has support for a 3d accelerator (they are usually 10 times more expensive than gaming ones), then you have a chance to get graphics support in applications (usually cad) and even games, but network lags will still devour the whole impression, and the prices of such decisions will finally be finished off.

why do you need a dozen on a VPS? MS forbids such to do.
