Why don't gaming PCs use multiple processors?

Here on the server often costs 2 processors. So why don't we shove this into ordinary PCs?
And why is it not advised to use the server as a gaming PC? After all, there are the same frames and CPU (I think I can buy a game card in my server and use it)

Sometimes four cores are too many. Parallelization of calculations is not such a simple matter.
And the servers have their own specifics - they do the same operations around the clock, in multiple threads at the same time, for each of the sites that they host. And the iron there is not the one that is used in "normal" PCs. They do not advise because it is much more expensive, with a meager performance gain in the same games. But of course you can take the risk.
