Why does VMWare Workstation show multiple OS boot options?

Installed 1 OS - CentOS, when you select the following appears:

How to remove unnecessary ones and what does it mean? And how correctly to end a session of "guest"? Shut down?

It is not the virtual machine that does this, but the OS itself, in the bootloader there are entries for the last kernel, the previous one and an item for loading into the cli recovery mode. If the system is shut down correctly, these items are not shown.
