Which version of Windows 10 should you choose?

I've been sitting on the seven all my life, and now I'm going to install the 10-ku on a new PC. Now, since there are many versions like 1507, 1809, etc. also some kind of LTSC ... then I would like to choose the most adequate, stable and fast version of the system. Plus, I would also like to hear some recommendations to improve the efficiency of the system.

PC I'm going to install Windows on: i3-9100F, GTX 1070, 16GB RAM, SSD+HDD. Goals: games and work (programming).

LTSC is mostly for companies. There are fewer features, but a long life is guaranteed.
