Which server barebone to choose?

Hello. I need to build a server. The choice fell on barebone for subsequent assembly.
I am doing this for the first time, so I have a few questions:
For example, take this server: www.supermicro.com/products/system/1u/6018/sys-601...
1. You need to install 2 processors immediately, otherwise nothing will happen work?
2. Can I install only the E5-2600 v3 family? (Or can I install any other processor on 2011v3?)

The fact that you gave a link to the server is very far from the concept of "barebone". Power consumption and fan noise will shock you.
If you collect something on a mini-ATX form factor.
The motherboard should work on the bottom of the processor, but the RAM on separate channels for each processor. That is, it will not be possible to score all 8 slots without a second processor.
In such cases, read the documentation, in which it's all chewed up.
And most importantly, by the level of questions, it is clear that you are not quite the person who needs to assemble something on his own. Therefore, there is an IDEAL and proven solution for years - HP ProLiant MicroServer Gen8
But with it you can already turn on your imagination and find a modified BIOS, insert 5 and 6 hard drives, and so on. Look it up on google photos.
