Which is better for the 2700x and the subsequent replacement of the processor with a newer one?

I now have an ASRock AB350 Pro4 motherboard (I plan to give it to my younger brother), I think to look for its replacement and settled on Gigabyte X570 AORUS ELITE with 14 power phases and MSI MPG X570 GAMING EDGE WIFI with ? power phases. Or are there any better ones?

See what the price is.
I would generally recommend something from the ROG series from Asus.
Of those offered personally, I would take Gigabyte, and only because the system software from them is not as vomitous as that of MSI.

b550 normal is enough. x570 will have a couple of fast slots and other nonsense. in theory, on the b550 even the memory accelerates more cheerfully. and on a normal b550 any percent will go
