Where can you track all http requests going to the site?

I know that the site is hosted by a specific host on a VPS. Can I buy a VPS from the same host and track from it? Or what are other ways?

if you were on the same switch \ in the same vlan, then it was possible to take a tcpdump dump.
otherwise, no way. though maybe someone else knows better...

The only way is to log in to your vps hosting the site and just see what's in the nginx access_log
