What to choose from the following VPS: DO, Linode, OVH, Hetzner?

I want to transfer all my projects to one VPS: about five sites. The total attendance is low: up to 50 people per day, a significant increase is expected in the future (up to 1k). The content will be legal. Sites as client online stores, as well as own information resources. At the moment, 12GB is used, in the near future this figure will double and be about 24GB+, and maybe even 30. It would be nice if the backups could be stacked outside the disk quota, and that they could be downloaded. The server is changing in order to increase the speed of sites (transfer to nginx+php-fpm+redis). Also, the server will be frequently accessed by vendors for synchronization. Traffic will be low: html+images.
Requirements:
50GB SSD~
Maximum possible uptime
>= 2GB RAM
It is desirable to have two cores of some kind of server processor so that the server speed is maximum
Ideally, the ability to make backups outside the SSD disk quota
At a price not more than $20 per month, the lower the better.
DigitalOcean - $20, 2GB RAM, 2xCores, 40GB SSD.
Linode - $20, 4GB RAM, 2xCores, 48GB SSD.
OVH - 11€, 8GB RAM, 2xCores, 40GB SSD.
Hetzner[CX20] - 6.9€, 2GB RAM, 2xCores, 50GB SSD.
Hetzner[CX30] - 11.9€, 4GB RAM, 2xCores, 100GB SSD.
Vultr - $20, 2GB RAM, 2xCores, 45GB SSD.
From what is listed here, the most attractive in terms of price / performance ratio is Hetzner [CX30], the only question is why such a difference in price? Cheaper than DO and better performance? Or ancient processors from coffee makers on Hetzner?
OVH offers 8GB of RAM, I don't know why so much. Now on my test VPS in load tests I run into the CPU, both when running php-fpm, and when serving static content (cache) with nginx, while the RAM is almost half empty.
Why is everyone praising DO and Linode so much, and what are the differences between the two? Why have so many already accepted these providers as the standard and consider them the ideal? Why don't they choose Russian VPS for 650+ rubles?

Of these, I advise either vultr or linode.

vultr
linode
Vultr is also available for $2.5, you just need to choose the right location - try New Jersey
DO I do not advise because it is more expensive. And what are his advantages over the first 2? It seems to be not.
Hetzner did not use.
