What literature to read on data carriers?

I want to go from "I know what a hard drive is" to "I know the difference between scsi and sata".
From "I know what dd is" to "I can write my own data recovery tool".
I want to understand how file systems are arranged, how data is stored on hard drives, to know the answers to questions like: "Why does my computer see a flash drive as a scsi device." I want to be able to recover any data.
