I want to buy a server for 2-5 websites (Wordpress)
Attendance approximately: 10,000-20,000 people/day
Maybe a peak of up to 300 people online
Is it better to buy used or new? Or assemble it yourself?
Recommend specs to save money.

Sorry, but your question has nothing to do with hardware.
With a load of 20,000 people / day, any budget VPS can handle it .
The load on the server does not change in the number of people online, but in the number of requests (visits to the page) per second (if this is not a chat, of course).
99% of webmasters do not torment themselves with such questions.

For your task, it is really better to try virtual dedicated servers.
