What does a probe request consist of?

Let's say there is a router that is configured to scan WiFi air, the result of this work will be a file with a record of mac-identifiers.
But, it is interesting to know what other attributes will be caught, in addition to mac? Will there be a list of ssids of previously connected points in the requests?

@Griboks

Everything that you see in the usual network connection interface + some garbage will be recorded, such as poppies of clients and points, encrypted pieces of data with the addressee and sender, service messages and everything that is specified in the protocol specification.
