You will not get such accuracy out of the box, only if you calibrate the device for a specific thermocouple. If calibrated, then almost any will do, of those that hold the range. You can choose from the wiki .
If you need high accuracy, then it is better to take a thermistor, they have up to 0.01 ° C

I advise you to take a thermistor pt1000. there the corresponding accuracy is "out of the box". and guaranteed to maintain accuracy over a long period of time.
