Should I expand my scope with iOS Android and Backend?

I am at the stage of 2 completed projects on upwork, I can’t get the next one for about a month. I constantly see orders where the customer needs iOS + Android, and it’s even better that the backend is also made by one person. Is it really that effective when one person does it all? With a backend, I have experience in writing APIs and some MySQL settings. Do customers hire 2+ developers when describing "Need iOS Android Expert for my APP". In the description, they sometimes also write that they do not have a backend, but as I understand it, they expect this from the developer? Or is it just a part of the orders that are not worth spending time on as well as a fixed price of 100 bucks?

for smaller projects this is handy as you just need to learn how to work in pairs or trios to get started.
