Set up a VPS with SSH, how?

Good afternoon. At the moment, the site is hosted, I'm thinking of switching to VPS, but I've never dealt with it. To begin with, I would like to take simple characteristics, OpenVZ, Ubuntu. But bad luck, only SSH and FTP are given to access the VPS, there will be no remote desktop, and hence no GUI. In the past, I have raised apache and a mail server on Windows, but only using the GUI. And how to configure these things on the command line? Is it worth switching to such a VPS or is it better to take a more expensive one (namely Windows with Remote Desktop)? Thanks to.

This extra resource eats on the server for your money - therefore.
There are orders of magnitude more instructions on the Internet on how to configure the software you need from the command line than how to configure it from the GUI.

OpenVZ has restrictions on making changes at the system kernel level, i.e. if you need to add something (regarding the operation of the system), you will not be able to. For study it is better to take KVM.
