Security and privacy on cloud desktop Windows hosting?

I will introduce constant trips, I often use the logic of the remote desktop - I use the full-screen remote desktop on my home computer.
It’s convenient when all the familiar environment is at hand and in the form as you left it an hour or a week ago - connect and work from the moment you left off: complete the presentation in powerpoint, edit the video in the premiere, add software to the SDK, etc.
As a system, I use MS Windows is a habit I'm not ready to give up. I connect from my netbook or to a bigger screen at hand on any machine.
In connection with the breakdown of my home machine, I thought about making myself a familiar remote desktop on a third-party hosting. There are 4gb ram*4 core*100gb hdd solutions for $15-20 per month, which suits my power needs quite well.
I ask those who use such solutions for themselves to suggest the pros / cons in comparison with a home desktop. How are privacy and security issues handled? What can the host see, what access to my screen/my files/keyboard input can it have?
Is it worth partitioning and encrypting a disk? Is it convenient and is it even possible in a dynamic hosting environment, when in a couple of weeks I want to increase the disk by a couple of hundred Gb for short-term current needs, and then return it back.
Is it worth doing system backups? Or is the hosting doing it? (I didn’t do it on my home machine - I just kept all the files on an external raid)
What other points can be taken into account when organizing a workplace on a hosting VPS?
