Process or outcome control?

Argued with colleagues: what is more important to control the process or the result? In what areas is only one option possible, and the other is not needed/useless/harmful? Preferably with specific examples. Thanks to.

Control of the result is possible if you have experienced, cool employees.
Process control is important if you have newbies or a task of critical importance and it is unacceptable that there are at least some errors in it.
Process control is harmful if you delegated to an experienced employee or in an area where you do not understand, but constantly control this process, preventing him from completing the task.
Properly set intermediate control is very useful, it allows you to more effectively evaluate the time, productivity of employees, keep them in good shape, identify errors in the early stages, misunderstanding of the task, and can save a lot of time. But to organize the control of the process so that you yourself do not get bogged down in it and have time to complete your other tasks - this is the real art of a leader.

I make a living creating websites. We use intermediate control.
Suppose now we have agreed that I will make an online store for you in 3 weeks.
May 22 - I start work
May 29 - I show the design
June 3 - I finalize the design according to the needs
June 5 - I finish all minor design improvements (buttons, menus, fonts, indents, mobile version)
June 12 - a completely ready and working store (3 weeks ended)
June 14 - the same thing, only already on the customer's hosting. In the same way,
payment is distributed over all these control points. 1/3 prepayment. 1/3 upon completion of work with the design, 1/3 at the time of delivery.
According to this scheme, the customer knows when and what to expect from me, does not distract from the work process.
There was a customer who demanded daily work reports... I sent it 4 days later. It's impossible to work like this...

For example, a problem arose and you can always view the process itself on the video, including in real time. Everything that happens on the desktops of the entire company.
