Is my Macbook 13' 2015 i7 16gb worth it for my 13' 2017 i5 8gb?

In one I write music in Ableton.
It seems to me that the new poppy will be quieter, and with better color reproduction, is it?

I would advise you to stay, as 16gb will probably still come in handy. Plus, your keyboard is such that you don’t need to purge it with an enema every time)

Go to the store with your laptop and compare whether color reproduction is important to you - it can be important by numbers, but you will only know how you actually feel it when you feel it.
As for the noise - I don't think that the noise is worth the RAM and the keyboard with which there are constant problems.

No. Some people think that 15-year-old MacBooks are the company's last normal laptops. But what definitely should not be discounted is that RAM cannot be increased on new macbooks in any way. I would stay on the Mac for 15 years. Maximum - I would change the battery if (and probably already) I'm not satisfied with autonomy.
Well, no problems with the keyboard and the erasable anti-glare coating ... In general - if the MacBook has been working well for 15 years - do not change it.
