Is it worth installing Mac OS Sierra 10.12 on such a laptop?

Processor - Intel(R) Core(TM) i7-7500U CPU @ 2.70GHz
Number of cores - 2

Look for the presence of drivers for the video card - this is the main problem.

The question "is it worth it" is quite rhetorical and only you can answer it, because. you need it first.
But the answer to the question of whether a hackintosh will fit on the above laptop - yes, it will, but there are nuances:
1. Discrete graphics in hackintosh on laptops will not work in any way due to Optimus technology - accordingly, the hackintosh for graphics will use only the HD620
2 video core. Most likely, wifi, bluetooth and cardreader will not work, to answer unambiguously write the brand and model of the modules. You can find out in AIDA
3. Also, most likely the touchpad will not support multi-touch gestures
. And it goes without saying that you need to correctly configure config.plist and add the necessary kexts, this is a standard procedure.
