Is it true that all traffic goes through the DMZ, and then from it to all machines?

If there is a DMZ on the local network, then all traffic goes through it.

No, it's not true. DMZ is a demilitarized zone organized to separate services available from the outside from the company's internal network. So the presence of a DMZ in the general case does not say anything about how and where the LAN traffic goes. It may happen that there is a proxy or other access filtering device in the DMZ, then yes. But that's another matter.
