You need to get feedback from your "planned" in the form of a visual picture.
To do this, state all your ideas on a large chalkboard, brew coffee and examine them for an hour every day, periodically “painting on” some details that have surfaced in your head.
Quick start - you will need a board that is large for the whole wall, if not - try to find one (I make boards myself and I can tell you about all the ways to create such a tool).

The board should live with the drawing for at least a week, but preferably three, so that no one erases the information.
1. Divide the board into three segments - the first one on the left will be the "accumulator" adjusted to your thinking.
It is important that you can add to it all the time.
What you do - you stand and think about the project, and you write out any word (meaningful) from your head to the board. Just in a column and then in columns if space allows.
Write out words until the moment when you realize that there are no thoughts about the project in your head - they are all on the board.
Repeat this point every morning.
2. Looking at all the written meanings on the left side, you try to arrange them in a network diagram format, understanding what follows what and what leads to. This is where the "board" helps, because you can redo the picture all the time.
Readiness criterion - you must see the whole picture of connections within the written meanings. If there are no connections, they either appear, or it is a sign that this is a thing unrelated to your intention and it can be crossed out.

When you get an inner feeling looking at this kindness "yes - this is what you need" - you take each goal from left to right in your network diagram and start to paint "tasks" on it in the remaining third segment of the board - answering the question "how to achieve this".
It’s just that you make such a “actual runaway” of your goal with a list, which customers “pour” into Trello for you.
4. You just take every task that you describe to yourself and do it.
Now you have the tool to tell yourself honestly - either you don’t want to achieve this, or you want something else, or you really want to organize yourself somehow but you can’t fix everything in its place.

I have a somewhat similar problem.
I start with crud every time. Here is some stumbling block. And so and so. And each time with a new project.
Instead of moving on. Already 10-15 variations, then I get confused which one I like more.
Front and back in one folder or two, etc.
Now I got myself a trello and made a mini-office for my own developments and developments. Where I systematize in which "project" what I implemented.

First you need to determine the basic functions of your project, so to speak, minimal, but which will be needed to start, which the user will already be able to use.
Example: blog - well, let's say a page with some articles. All. Everything that can be improved - write it down, determine the release dates, when the new version of the product will be released and select those features that will be needed in this release.
If you need a design and you don’t understand it or don’t like to do it, give the task to freelance, pay money, don’t save money and get the design. Learn to allocate your time and correctly assess your strengths. If you don’t know how to do something well, either don’t take it better, or you will have to spend enough time studying this direction, which can take days, months, years. It is not profitable.
And yes, the most important thing is to start doing something, as long as you make plans, nothing will change, but planning, and these are two different things, is a must.
In general, start to act already and each time it will be easier.

I read hundreds of blogs and tips on how to properly plan a project, but I tried to do it myself, but everywhere you need to draw on a piece of paper, and I can’t draw , for me to draw a layout on a piece of paper is a headache and the idea instantly fades.

Options:
1. Learn to draw on a piece of paper .
2. Pay someone else to draw for you.
