there is no way to install a second hdd - there is only one sata port on the board.
models with FD come with hdd + custom pci-ssd.
emnip, the last mini, in which you could plug a second sata disk - mac mini server 2012.
upd: in theory, you can put a second disk if you buy a model with ssd and find a sata cable. but IMHO it's not worth it.
In the latter there is no place for a second hard drive. If the money is free, you can put an SSD inside and connect the HDD via Thunderbolt.
There used to be a Mac Mini Server model with two drive slots. In the last line, it seems that it is no longer there.
