Is it possible to disable the paging file in Ubuntu by commenting out a line in fstab?

It seems to work, and at any time you can turn it back on. But is this correct and will there be other jambs to get out?

Can.
I always turn off the paging file on Linux to reduce the load on the SSD. But I have a lot of memory.
You can also put a ZRAM swap. When RAM fills up, it compresses the data in memory (rather than transferring it to disk) and frees up some of the memory.
The disadvantage of not having a swap is that if the memory suddenly becomes full, the system will hang, and then it will launch OOM Killer and start killing processes to free up memory. If he comes across some useful process processing your data, his data will be lost.
And on Linux, a whole partition is often allocated for swapping memory. The good thing about a partition is that it cannot be fragmented, which improves performance.
