Ubuntu Server - Read-only filesystem?

Hello everyone, can anyone tell me the way in the right direction
there is a physical server on Ubuntu 20.04.3 LTS Server on it, the developers are running jenkins
, the same problem occurs, the file system falls into Read-Only, after rebooting the OS does not load (below the photo- sorry for the quality)

after fsck /dev/mapper/....... and fixing a bunch of bugs, ubunta is up, i tried reinstalling the OS and changing the ssd, but the problem doesn't go away.
in the logs (syslog) I don’t find (or don’t see) how to detect the problem, there is a break in the logs for almost 6 hours, but I don’t see any errors

To greatly reduce the likelihood of such events, I remove the /var and /tmp sections from the root.
As a result, almost nothing is written to the root file system, except for manually launched updates or installing new software, changing settings (and all this is not done every day).

/etc/fstab
And then read what
errors = remount -ro is.
Actually, all you need to do is replace errors = remount -ro with defaults and reboot
and check the disk for logical and physical errors.
Return everything to its place, or leave it as it is
