How to update vmware. first esxi then vsphere or vice versa?

Actually the question is in the header. I can not find intelligible information ...
what is the update sequence.
now there are two data centers, one 5.0 the other 5.5
, ideally both should be raised to 6.x
, or at least the first one to 5.5
, but I'm afraid that when esxi is updated, it will fall off vsphere...

ESXi is vSphere, or rather one of the components - VMware vSphere Hypervisor (ESXi). I will assume that you meant VMware vCenter Server.
When upgrading, see the compatibility table and make sure that the versions of all components used are compatible with each other. In your case, first update vCenter to version 6.0.0 U2 or later (the latest with ESXi 5.0 support), then pull up the ESXi versions. Then repeat the process to the version you need. And version 5.0 was released in 2011, and if the server with it is the same old, then I recommend checking the hardware compatibility before updating .

First vCenter. Because the old hyper will contact the new sphere, but the new hyper will contact the old sphere - well, no way.

Always start with VC, backwards compatible (downward) it has. On the contrary, it won't work.
In general, you should be guided by the VMware compatibility matrix https://www.vmware.com/resources/compatibility/sim...
in some complex cases, you have to step up versions for general alignment.
