How to replace disks in a storage system with larger ones?

Good afternoon!
There is a Readynas 3200 data storage and 4 x 500 GB disks, combined in RAID 10.
We need to replace them with 2 x 2 TB disks, combined in R1, with data transfer to them. How to do it right?
The repository is in the organization and is constantly in use.

Take an external 1TB screw, merge data from the NAS to it, then assemble a new raid on the NAS and copy the data back.

The repository is in the organization and is constantly in use.

Whichever option you choose in the end, I would strongly advise you to first make a complete copy of all data.
And so, yes - the copying of data proposed above to a completely new storage seems to be the most reasonable.
Alternatively, you can still try creating a full image of the storage, for example, if it has DAS support, but with this option, different nuances and approaches are possible, you need to look specifically and on the spot.
