How to remove any potential snooping on a working Macbook?
They gave out a working Macbook Air, there is a paranoid (and most likely not corresponding to reality) feeling that it may have programs for tracking laptop work time, browser history, etc. But, nevertheless, I would like to rid myself of this paranoia and remove any tracking.
The laptop was issued almost new (several charge cycles) with reset settings, ie. when I first opened the laptop, I completely deployed a clean system. Well, and, accordingly, I have full admin rights
. Will it be enough to format the hard disk and roll a new OS? Do I need to additionally perform any actions with EFI? Are there any additional steps needed?

You are suffering from bullshit.
Just put some WireShark and see if something merges or not. By default, in macOS, network activity is very low, it's not a problem to see statistics for a day.
Well, you can look at the list of processes, they are not hidden in macOS.
And according to the list of installed programs, too, by the way. Even if something is watching, then in the "Programs" you will see it.
Boot into system restore, format the disk, install the system
