No way - the hoster can simply dump all the memory and disk of your VPS and no physical presence is necessary. And you won't even know about it.
No way. Even with the physical presence at the workplace of the hosting admin. The hoster takes a snapshot of your car and slowly dissects it in a dark corner. And to build a fully protected system boot without access to the host is impossible in principle - there was an article on this topic on Habré (I won’t give a link, I don’t remember).
I can’t be 100% sure, I didn’t do it myself, but superficial googling says that you can encrypt everything with BitLocker. In theory, a system dump would be of little use in this case. But the question requires a deeper study, and in general, of course, with physical access to the machine, all this is very doubtful.
