Everything else .100-200 is clients where vpn users should not climb.
It is necessary to make sure that clients have access to servers but go to the Internet through their gateway.
It is possible to make a network 10.0.1.1/24 for vpn clients and change addresses from, for example, from 10.0.1.2 to 192.168.0.2. This is a good decision. And if so, where can I set it up in Mikrotik?

Make a separate subnet for clients 10.0.1.0/24 and then configure the forward + routing table chain as you please.
