How to legally withdraw money from payment systems (with contracts, acts, etc.)?

Our modest company provides services to overseas clients - mainly from Europe, USA and Australia. Many projects are quite small - $500-$1000 - and clients, of course, want to pay for our services by paypal or card.
In this case, there can be no talk of any contracts and acts of work performed, but I really want to work legally.
We currently use 2checkout.com to accept payments. They support the withdrawal to a bank account, but they do not want to sign the contract, and even more so the acts. There was already a similar question: Does anyone have a foreign trade contract signed by 2Checkout?
Is there any service that is ready to get confused by this?
Or maybe there are some companies that can act as intermediaries? That is, we transfer money to them, conclude an agreement with them for the provision of some services, and they already transfer everything to us, sending acts with seals after them.

Um, what prevents you from doing this through Russian PayPal?
Open a business account in Russian PayPal as a legal entity. person or individual entrepreneur and work as inside Russia.
I didn’t check it in practice, but I’m interested in the topic and in January I talked a couple of times with their tech. support on these issues.
Scheme "Odesk (Elance) -> PayPal -> r / s IP". Does anyone use such a scheme?

Here questions immediately arise: do you want an office in the jurisdiction of the Russian Federation? Money to a bank account in rubles? Or does it still have to happen there, where the money originates initially?
Let's say you can find an office that could receive PayPal -> PayPal, and then transfer money to a bank. And send any signed documents. And even get confused and make a print specifically for this.
But then there are questions about the rest. for example: how to send money to the Russian Federation? SWIFT? Then 500-1000 is not a small amount? There will also be a swift fee, 40-100 dollars.
Again, if your PayPal is Russian, then a commission arises when transferring abroad. Or is it just from the card?
Actually, you might think. But the question requires research.

Colleagues, tell me, can the tax authorities somehow document mutual settlements within PayPal (without withdrawing to a bank account), or does the tax only take into account the funds that you withdrew to a bank account from PayPal?
I mean, if the second option, then it is profitable to work on the simplified tax system of 6%.
And does this also mean that up to the notional amount limits of $9K, you can turn over the turnover without submitting any documents to the tax office?
