How to install OS X El capitan after Beta Siera from scratch?

I installed the Siera beta, of course I didn’t make backups, it won’t work to roll back. I'm trying to install from scratch, I erase the disk through the utility, and so on, but in the end, when I click on the installation of the system, it again offers a sphere.

What's the point? Sierra is almost stable, but the release is just around the corner.
