How to implement SharePoint event logging?

Hello colleagues,
I have a task to create a logging list on the company's SharePoint portal - changes, adding, deleting files. Similar CRUD for permissions and groups, as well as for logging in and out of the portal. SharePoint is new to me. After researching, I found *Audit Log Trimming* which is no longer supported by Microsoft. And the platform below doesn't work for me (I think it's in development)

Given this audit experience is powered by the Unified Audit pipeline, we no longer support Trimming as a feature. You will be able to access files that have been trimmed so far in the document library that you have set for this purpose.

Is there any way to implement Event Logging in the portal?

As for me, you want something strange, but point by point. In the settings of each document library, enable versioning. You will have the time of creation and the author. You create 2 reports further the first documents there a source do spcontent and select from tables all data. The second report is a selection from the groups, respectively, everything will be there. Squeeze out the deleted ones in the trash. As for the entrance and exit, I don’t remember now, I’ll come up and describe it. This approach is head-on. By means of a ball, you can also add a workflow to the lists and write directly to the log.

SharePoint Online is possible to create a remote event receiver and subscribe them to the necessary events, inside the logic of which you can send data, for example, to App Insight or get confused and wind up PowerBI, and in either case, Azure is our everything.
It is also possible to have a Web Hook on the lists, I once made a report about this.
