How to "enter" mobile development?
There are quite a lot of local cafes, pizzerias, etc. in the city. Some don't have mobile apps, they just haven't gotten around to it, I guess. I would like to be filled with knowledge in mobile development. How much time do you think it takes from scratch to create a pizza ordering application, for example. So, subjectively, of course, that everyone has a different way of learning. What technical literature would you recommend, and indeed where to start?

From a couple of months if you have development experience in related fields (php, JS, Java) to a couple of years if you need to master the basic syntax of programming languages (and for a pizza ordering application, it is desirable to know a couple of languages).
Literature - language syntax references (for example, Swift, Java and php), references for working with databases, references for iOS and Android SDKs. All literature is available for free on the developer sites of Google and Apple.
If you think that there are no applications, because your hands did not reach, then you are most likely mistaken. Developing a good application is quite expensive, the same order of pizza with the addition of a couple of beauties will easily fly away for 10 thousand dollars, most small cafes are simply not ready to invest that kind of money.
About a year.
It all depends on your skills and ability to learn on your own.
Judging by the very fact of the appearance of this question, you have problems with independence
