How to digitize an analog signal and transfer it to a laptop?

The task is next.
1. amplify the signal, since it is very weak
2. digitize the signal
3. transfer it to a computer so that I can decompose it into a Fourier series or do something else with it
. I have a computer, arduino uno, intel galileo.
What would you recommend to accomplish this task?

Analog signals are different.
For audio frequencies, the microphone input of a sound card is suitable, for higher frequencies, an oscilloscope with a USB interface may be required.
