How to create a standalone system for printing material from a usb-drive based on a linux distribution using a touch screen?

To make it easier to understand the issue, I will break it down into parts.
Prelude:
In a certain store there is a service for printing material from usb drives. Since there is a school nearby, visitors most often print .doc files and everything else.
There is a problem in the constant stream of viruses from these flash drives. Yes, autorun is disabled, there is an updatable antivirus, a separate software for checking flash drives, and a separate one for controlling the registration of keys in the registry, but once every 3-4 months, the virus leaks steadily, it tortured me.
Idea:
From the existing Canon Isensys mf 4410 MFP, an old mini-PC and a touch screen, assemble a software and hardware complex that will immediately open the flash drives inserted into it and, in response to clicking on the desired file, send it to print.
Questions:
1) Which linux distribution to take (personally, I'm the closest friend of the debian branch)
2) How difficult is the idea to implement.
