First of all, there is no absolutely correct way to convert a complex audio signal into its algorithmic description (a MIDI file does not contain sound, it contains a description of the harmonic, dynamic and temporal structure, as well as some performance elements and a set of standard timbres, i.e. notes, their volume, start and end time, optional articulation and instrument type (this data is used by the midi synthesizer for sound synthesis). This is about the same as converting a photo of a painting into a vector.
You can find the notes of the desired work and translate them into MIDI, you can record by ear yourself, or you can analyze the file and get a more or less accurate structure. Most often, it will still need to be corrected manually.
