Each site on the new project will occupy its own "folder/category"

Or just make a 301 redirect from each site to its category?

Do you have 5 different sites?
1) Do you want to combine all sites into one? What does it mean to unite?
2) Transfer content from 5 sites to 1 to the new engine conditionally. Or do you need 5 different sites to actually spin on the same domain at different URLs?
