How is the subnet mask selected if the computer is in multiple VPNs?

Can a computer be on two different subnets that share the same subnet mask? How does the DHCP server behave if the computer is already on another network, but wants to join a new one?

Maybe. No problem at all.

Behaves as usual. The DHCP server knows nothing about this and does not want to know.

Roughly speaking, each VPN connection creates a virtual network card (interface) with its own network settings. And the mask of one interface does not apply to another interface in any way. The question is which interface the traffic will go to.

each vpn must add a route rule in which the subnet is written (address + subnet mask), if necessary, you can define priorities by metric (route item) manually by creating your own rules
