How does the provider see DoH/DoT traffic?

1. How does the provider see DoH/DoT traffic? As a set of random characters/letters/etc? Or instead of the ip address of the site shows the ip of the resolver?
2. And do I understand correctly that all information will be transmitted over the HTTP site in any case, even if you use DoH / DoT or sit through a VPN?

Like any other HTTPS/TSL traffic, it sees the address of the resolver you went to with the request, but doesn't see what request you made and what response you received.

What is the point of using DoH to work with sites that do not have https? Although now there are almost none.
If you work with a site that has https, then the provider will see which ip you are accessing, but because you resolved it through doh, then he will not see the domain.
Although, again, there is DPI, which can somehow indirectly understand which site you went to based on packet sizes and ip
