How does Excel deal with complex criteria in conditions?

I've got a problem that I can't figure out. Let's take the SUMIF condition as an example.
A few examples:

=SUMIF(B1:B26,"<=B*",A1:A26)
=SUMIF(B1:B26,"=10*",A1:A26)
=SUMIF(B1:B26,"<>10-+",A1:A26)
=SUMIF(B1:B26,"<ab?*",A1:A26)

Well, etc.
I'm wondering how excel works exactly with the middle part - the criterion. How does it parse special characters in the criteria, how does it work with numbers, where there are special characters, etc. For example, how will he understand what ">=10+-" means? Maybe there is documentation on this functionality somewhere? Thanks in advance
