why photoshop if you are preparing for printing. In general, it is also done there, but if you work in illustrator, then create the document correctly and nothing else is needed. (in the picture there is a German interface, but I think it's clear what is where) - create a document with the specified dimensions, cmyk color mode and 300ppi resolution.

Well, then just save as pdf and that's it, the document can be sent to print.
