How are Telegram forks organized?

I see a lot of forks from Telegram in the app store and in google play. It is clear that they took the source code and finished it to their needs. I found the source code for the web and android client, but where is the source code for the iOS client? Where is the server source? Further, it is not clear whether it is necessary to create your own infrastructure for authorization via SMS, or can you use the original one? Does anyone have experience? Share?
