How safe is it to use a computer on a hackintosh or os x on a virtual machine in the office? Will there be any questions in case of checking the software for a license.

Apple should make claims only to those who install a hackintosh not on a Mac. Therefore, if Virtual Box is on a Mac, then there are no problems. the costs are greater than what they will receive from you (compensation, etc.).

I wonder if there were precedents with the department with a different letter?) And they check everything in a row or only those programs that they were instructed to check by the copyright holders, otherwise they will figure it out without apple (who will give an opinion on the illegality of using the poppy system?).

If you do not have a poppy - then it will arise, of course.
Another issue is that Apple has no judicial practice in Russia, so they are unlikely to have to pay. But the company will be able to attribute 6 thousand to the total amount of illegal software for this. And there are more than 50k - it seems to be a criminal already.
