I'll add the classic from Mark Saltzman "Computer games: how it's done." The process of creating games is described in stages: from preparing the game to marketing and technical support. The book is quite old, but the ideas continue and will continue to be relevant. The author has collected invaluable experience of the best game developers. Definitely a must read.

About graphics there is a good series of Game Programming Gems. Even outdated articles there make sense.
About the psychology of gamers and perception - depending on what you need. If about the management of behavior - all neo-behaviorism and NLP. Something by Gregory Bateson ("Mind and nature", "Angels fear"), or John Grinder ("Whisper in the Wind"). Of course, there will not be a word about computer games, but this is a guide to action. About perception, I still have to throw in "Ecology of visual perception", it seems that it is also already in Russian.
The plot and other interesting things - in the context of RPG or what? Googled what books beginner writers learn from. Everything has already been invented there a thousand years ago;)
