Mikrotik hex will also cope with your needs. It makes no sense to overpay for a router with PoE ports that will not be used. Saved funds are better spent on one Unifi AP AC Pro, a PoE injector (usually included) and a controller for it. The Time Capsule is not an enterprise grade hardware (although RADIUS is supported), so you will experience Wi-Fi performance issues. If you need more ports, buy an HP 1920 series switch with as many ports as you need.

Bad choice. This model does not have hardware encryption for VPN. If there is no encryption, then the speed will be low (up to 20 Mbps) and the load on the percentage will be under 100%. look for another model with hardware encryption here: wiki.mikrotik.com
The simplest model is Hap ac2
In general, Mikrotik is a very good company.
