Most of this documentation, especially the good one, is under NDA. So it is unlikely that someone will give you normal links. Don't even look at the chicken Ryaba.
As for the structure, there are no clear rules. There are so many approaches to compiling a GDD (game design document), and each company (and sometimes each individual game) has its own. Each structure has its pros and cons.
The task of the GDD is to give the most complete and accurate idea of the game or feature to the performers. Take a break from this. And what and how you used at the same time, your head, or a home-made ANN, or something else, is not so important.
By the way, the documentation is different. For example: vision, concept, GDD, TK, art bible, recommendations for localizers, and much more, and even the code design regulations. It's all documentation. And everywhere their subtleties.
