Boot from LiceCD and if suddenly all the stuffing under Linux will work, then create a RAID array via mdadm and just install Linux on it.
Linux recently learned how to boot from mdadm, so it should work.
The upside is that such an array will work under Linux, which would not be the case with a hard array.
But, again, no one guarantees that everything will work after a reboot, even if it worked in a LiveCD.

I can’t say anything about mint, but Debian 9, from personal experience, feels quite good on software RAID via mdam. It is configured directly from the installation.
